Butter bean soup

 You're going to need:                                       

-1 can of butter beans (including the liquid)
-1 onion
-2 garlic cloves
-a couple of brown mushrooms
-250-300ml of vegetable stock
-20gr of toasted pumpkin seed for garnish
-olive oil for sprinkling 
-salt & pepper to taste

Chop onion, garlic and mushrooms and saute them in 1-2 tablespoons of oil for minute or two. Add a can of white beans and stock, season it and as soon as it comes to a boil let it cook for 4-5 minutes. Blend it with a hand blender, serve and sprinkle with pumpkin seeds & olive oil.
