Butternut squash risotto
You're going to need:
-1 cup of rice
-2 cups of water (or veggie broth)
-3 tablespoons of roasted butternut squash
-100gr of vegan feta cheese
Heat up 2 tablespoons of oil in a pan and fry finely chopped onion for 1-2 minutes, add rice and saute it for 2 minutes. Then add one cup of water and stir. Turn down the heat at let it simmer, stirring occasionally. When water evaporates repeat the process with the second cup, add roasted butternut squash and season it. Mix well with vegan feta cheese and serve warm.
