Coconut jasmin rice

You're going to need:
-1 cup of jasmin rice (about 200gr)
-1½ cups of water
-250ml of coconut milk
-3 tablespoons of sugar
-1 ripe mango
-50gr of cashews
step 1 - put jasmin rice in a medium saucepan with 1:1½ water ratio, bring it to a boil, stir once and reduce the heat to low. Cover and cook for 15 minutes (or until it absorbs water) then remove from heat and let it steam for 5 minutes, then fluff it with a fork.
step 2 - put cooked rice in a wider pan, add sugar and coconut milk and stir it over medium/high heat until milk is absorbed. Then put the rice in cups, slightly pressing it and let it cool. Once cooled, remove it from the cups and serve on a plate with wedges of fresh mango and sprinkled with cashews dry roasted in a pan (for 1 minute on both sides).
