Lemon cheese tart

You're going to need:
-200gr of vegan butter
-4 tablespoons of sugar
-12 tablespoons of flour
-3 tablespoons of cold water
-1 vanilla pudding powder
-1 lemon
-300ml of soy milk
-2 tablespoons of sugar
-100gr of vegan butter
-100gr of powdered sugar
-100gr of vegan cream cheese
Mix butter, sugar and flour until you get crumb-like texture, then add water and kneed the dough. Leave it in a fridge to rest for a half an hour. Spread on the baking tray and bake for 15 minutes on 200°C.
Grade a little bit of zest and then squeeze lemon's juice, mix that with soy milk and bring to a boil. Mix pudding powder with sugar and 6 tablespoons of water. When the it comes to a boil add pudding mixture and mix, turn off the heat and stir it or about 2 minutes. Set aside and let it cool down. Mix 100gr of butter with powdered sugar, and add it to cooled pudding mixture, alongside cream cheese. Mix it well and put it on a cooled base, decorate with mint leaves.
