Pad thai

You're going to need: (for 2 portions)

-200gr of rice noodles
-100gr of fried firm tofu*
-50gr of fresh firm tofu
-1 onion
-3 cloves of garlic
-100gr of bean spouts
-1 chilli pepper
-1 tablespoon of dark soy sauce
-1 tablespoon of tamarind sauce
-1 tablespoon of coconut sugar
-100gr of roasted peanuts
-1 lime
-spring onion


*cut tofu in small triangles and deep-fry it until golden - for about 2 minutes. Remove and let it dry on a kitchen towel.

Heat up a couple ot tablespoons oil in a pan, chop garlic and fry it until golden, then remove from the pan and set it aside. Cut onion in slices and saute it for 2 to 3 minutes. Chop hot cilli pepper and add to the pan with bean sprouts and crumbled fresh tofu. Saute for 1 minute and add soy and tamarind sauce, coconut sugar and season to taste with salt, squeeze half of lime and leave the other half for serving. Cook noodles according to instructions on the packaging and add them to the pan, add previously fried garlic and mix well. Serve with crushed peanuts, a wedge of lime and fresh spring onion.
