Pineapple fried rice

You're going to need:

-400gr of cooked and cooled rice
-100gr of oyster mushrooms
-50gr of firm tofu
-100gr of peas
-100gr of fresh pineapple
-1 onion
-1 tomato
-1 spring onion
-1 green chilli
-half a teaspoon of yellow curry powder
-1 tablespoon of dark soy sauce
-half a bunch of fresh coriander
-cucumber & lime for serving
-fried garlic (use recipre from pineapple red curry)

Heat up 3 tablespoon of oil in a wok and fry chopped oyster mushrooms for 1 minute, add sliced onion, fry another minute, add peas and fry 2 more minutes continuously stirring. Add crumbled tofu, and sliced & diced tomato (seeds removed). Season with curry powder, soy sauce and a pinch of salt. Stir, add chilli and spring onion chopped roughly, add rice, diced pineapple, chopped coriander and fried garlic, mix well and remove from heat.
Serve with lime wedges and cucumber slices.
