Pineapple tart

You're going to need:
-200 ml of pineapple juice
-1/2 of pineapple
-100 gr of ground ginger biscuits
-100 gr of vegan butter
-250 gr of flour
-1 tablespoon of sugar
-100 gr of melted white chocolate
base: mix butter and sugar with flour until you get grainy texture, then add one or two tablespoons of cold water. Kneed it, wrap it in a foil, and let it sit in the fridge for a half an hour. Take the dough and spread it on a baking tray. Bake it for 15-20 minutes on 200°C. When it's done, let it cool down before putting the filling.
filling: bring the pineapple juice to a boil, then add ground biscuits, stir it and add pineapple cut into bigger chunks. Let it cool down a little bit and put it on the base.
Drizzle with melted white chocolate
