Veggie rice

You're going to need:

-1 cup of of brown rice (unmilled), about 200gr
-1 onion
-2 carrots
-5 mushrooms
-1 courgette
-1 lime
-50gr of pumpkin seeds
-salt, pepper

Add rice and water to a pot with 1 to 2 & 1/2 ratio (two and a half cups of water to one cup of rice). Cut veggies and mushrooms in strips and add them to a pot, and season to your liking. Bring the rice & veggies to a boil then reduce the heat to low and simmer until the rice is tender - about 40 minutes. When done, add fresh lime juice, sprinkle with pumpkin seeds and serve warm.
